On 27th and 28 September Carpigiani Gelato University, in collaboration with the renowned Italian pastry school Cast Alimenti based in Brescia, will hold a special two-day seminar in which Pierpaolo Magni is invited as a lecturer. The theme of the workshop is based on Magni’s book “Reverse Fusion: Aiming at A Tasty Aesthetic of the Italian Home-Made Gelato”, which applies the traditional decorative techniques of Italian pastry to an innovative ice cream. The products of this seminar will only use 100% Molino Quaglia wheat flour.
