To add value to the vocation of Trentino for the production of classic method spumante, increasing the production of TRENTODOC. It is the goal of the team of producers who present themselves under the collective trademark TRENTODOC, in order to promote a wine that is an ambassador of quality and sophistication.

TRENTODOC is the collective trademark that has sealed the belonging of the classic Trentino method to a unique and highly suitable territory. By wish of the Autonomous Province of Trento and of the Chamber of Commerce of Trento, the trademark is put on every bottle, alongside the producer’s brand. It is an important action that in a short time has helped identify, and therefore recognize, the bottles of all the 45 winemakers who have embraced the trademark. The TRENTODOC trademark is set as an economical programming process that, given the higher added value of Trentodoc wines, was created with the goal of giving a bigger chance to the existing wineries and bigger income guarantees to winegrowers. To go further though, it necessary to focus on the “Trentinity” of the product, that is on the details that make it recognizable, and have a stronger sharing attitude when it comes to project strategies. A sense of belonging to the territory must be increased and developed further.

Characteristics and production – The layout of the vineyards at an elevation of 300 to 700-800 meters above sea level is what differentiates Trentino from other spumante entities. This means a colder climate and fresher wines, with lower acidity, more fruit notes for smell and taste and a higher minerality. These are quite long lasting wines, whose sapidity and salinity derive from porphyric terrains where the vineyards lay. The richness in flavour is, on the other hand, a consequence of thermal excursions. These characteristics represent a common base for the work of every winery. The classic Trentino method results to be fresh, pleasant and highly drinkable. A mix of features that are currently very appreciated by consumers.

Pairings – It is ideal as a contrast to greasy food or food with a high amount of starch. In particular, the acidity helps pairing spumante Trentino with several types of vegetables, beans, potatoes, fish and shellfish. This is why TRENTODOC is the ideal partner for the specialties of a well-structured regional cuisine whose origins date back to the Austro-Hungarian empire with recipes such as knoedels with melted butted and sauerkraut. A simple food tradition, not quite varied, but that presents delicacies as the “patugo”, originated in Cembra Valley, a hodge podge of potatoes, beans, several vegetables and oil. Or juicy cold cuts such as Ciuiga, a salami with turnips, Lucanica or Mortandela from Non Valley.
